If you only eat once and not very much your body goes into more of a survival mode and will tend to hang onto fat stores because it doesn't know when the next meal is coming. That is why anorexic people tend to have no muscle but still have extra fat because their body thinks it needs the fat. (not that im saying your anorexic but you get the idea)
