Five days a week? Are you on a five day split? If so, what's your split?
If you're on a split, chances are you're getting more than enough rest.
As, splits only hit a major muscle group once a week. They do hit the same muscle group again, sometimes but it's not enough to count IMO.
Unless you go hard when you lift, overtraining and rest won't even be a factor.
Also, I tend to add 5mg of glucose to my PWO shake. Make sure your whey is quality. Nothing sold at Wal-Mart or GNC (GNC Brand).
Start taking a multi. If you can, get your hands on either ON Opti-Men or Orange Triad. If not, a regular multi should be fine.
You should look into a ROP, it supposedly helps increase test levels.
Here's my weekly workout.
Mon.3 sets leg curls , 3 sets ab crunches,3 sets hamstring curls, 3 sets curls ,3 sets military press,3 sets bench,3 sets lat. pull down behind neck wide grip,3 sets lat. pull down close grip to abs
Tues.5 sets curls ,5 sets military press,5 sets bench,5 sets lat. pull down behind neck wide grip,5 sets lat. pull down close grip to abs
Wed.same as Mon.
Thurs.same as Tues.
Fri.same as Mon./Wed
I used to do basically the same thing as above, but workout a day, skip a day workout a day.
I've been on the 5 day plan for 3 weeks now .And i feel like its working alot better than the rest a day in between plan .
I'm a roofer/carpenter and have been for 20 years . My theory is the work i've done makes my muscles hard gainers? Is it possible they are used to being beat up to the point i have to overwork them to get gains that others would get normally?
Overwork doesn't make you a hard gainer. Overwork puts too much stress on your body, limits recovery, thus halting gains. The term 'hard gainer' is an over-used excuse for many things - poor diet, overwork, poor exercise selection, lack of sleep, etc.
Your workout is a good example of overwork - if you can sustain that workout every day, you're not lifting enough
weight. Even then, what's the point of doing the same thing every day, just varying the sets? You're a roofer/carpenter which probably means you're swinging a hammer all day, every day. Why the hell would you need to do more curls? You're not gaining because you're body has gotten used to the work load the past 20 years and has no need to grow bigger and your exercise routine isn't providing any more significant stress to cause growth (probably combined with some of the other hard-gainer execuses).

^ This right here = Hard Gainer. Most of the time it's reflected in not eating enough (or diet).

TRRbogie has given some pretty sound advice also.
You need to definetly change your routine up majorly. Even a traditional split would be loads better.
Mon - Chest/Tris
Tues - Back/Bis
Wed - Off/Abs/Cardio
Thurs - Legs
Fri - Shoulders/Traps
Sat&Sun - Off/Abs/Cardio
You can try and switch Tris/Bis also.
Still manage to put some cardio during your lifting days but not the amount of your off days.
Your muscles have muscle memory, so every 3-4 months (or when your gains seem to be coming to a halt) change up your routine and exercises.
And I meant dextrose, not glucose. :/
