Ok grip

I can never really get a good grip doing the standard ok grip with my palm facing out like on the videos but I get a goop grip with it with my palm facing in, does the grip matter?

Yes, grip becomes very unique to the user. My grip usually is OK grip, thumb down, with my other hand at the base to prevent turkey neck.

I use an underhand OK grip with my left hand and an overhand OK with my right hand. The effect is that with my left hand I'm pressing the top and bottom of my shaft; with my right hand the pressure is more on the sides.
 
I don't understand your description of your palm facing out and in. The overhand ok grip leaves your palm facing down, your thumb and pointing finger next to your body, your little finger farthest away from your pelvic bone. The underhand ok grip has your palm facing up, your thumb and pointing finger away from your body, your little finger next to your pelvic bone.
