This morning I decided to try using with water for the 1st time with extra pieces it comes with.

1st I want to say it was very comfortable. My question is it normal that water still traveled up the hose and out the hand unit. I thought the water separator is supposed to prevent that. Do I need to worry about the water that went thru it?

No. It is displaying water that your penis is pumped

OK, so I don't have to worry about the water messing up the pump internals. It's not a lot of water as most went into the bottle between the tune and pump.

How high vaccum/pressure did you see on the gauge? Is it possible to see an accurate value when pumping with water? Just curious about this.

It initially read high as I was pumping but settled around 8 - 10psi
