I am trying to DIY build the device in the photos below. Does anyone know what those metal hinges/handles are called?

Never seen a hinge like that but if I were you I would go to a Home Depot or a Lowe’s department center and see if you can find it there in the hardware section. They may even have something better than what you’re using for what you’re showing.

No problem my brother! It is the same for me, I go to Home Depot and I get in to the plumbing and electrical section and my head goes crazy with ideas for different equipment to build. Sounds like you’re in that same spirit so I wish you the best my brother.

I am a bit baffled what's the part you are looking for, at least there's wing nuts that aren't so often used. To me it looks bit like some exhaustion pipe clamp ...

Thanks arkailija... This is the particular item I am interested in. I am not sure that its an exhaustion pipe clamp though, Its connected to the black tube.

Home Depot is the best place to find ideas and hardware for PE. With a little bit of creativity you can walk out of there with some serious homemade devices.
