They use soy protein in a crunch type of manner (kind of like a Nestle Crunch bar) and a layer of chocolate on the bottom. The two flavors I like are chocolate and peanut butter crunch. The bars are ment to be meal replacements. Just about 25% or better for all major vitamins.
